It was a beautiful morning, we decided to head to Chelsea to Gynette-NY to fix a necklace that had recently broke. The errands were done and he asked me “Are you hungry”? It was not yet 12 pm but as a professional eater that he is I know Jonas is always ready to work his palate. “Let’s go to Olio di Piú”I said, as I have good memories of that restaurant, I thought. I remember sitting in one of their stylish outside tables, my laptop ready to work, the steam of the cappuccino, my brunch, the sun on my face, and the feeling of accomplishment of an instant of happiness. As soon as I stopped daydreaming we were there. We sat at a corner table and a good looking waiter took our order. Pizza, Jonas said, please. Are you sure? I asked. I am impressed that he is ready to eat the most popular food in NY. I wonder what he will discover this time…

What are we eating?
We are eating a white pizza, it has prosciutto di parma Parmigiano Reggiano, mozzarella, and arugula on it. I like that the cheese tastes like actual cheese, the dough is light, it has enough yeast, the Parmigiano is not old, sometimes it is too old, it has a good flavor. It has a little bit of olive oil too. It’s a good pizza.
What is interesting about it?
The prosciutto di Parma, normally is on top of the arugula but here is on top of the cheese so it got a little bit hot too. Sometimes that is a problem because of the salt inside but here it works because they put it afterward but directly on the cheese. So it got just a little heat.
Anything that could have been done better?
The dough in the middle is a bit too soggy, the wood brick oven should have been warmer.
I looked at him, delighted for the sensations he helped me recognized. Thank you for taking me to your world of mouthful sensations, I thought. The awareness of the mixed of flavors and sensations were fantastic! Somehow I was not eating a pizza anymore, but a piece of tasteful art. Can I judge it as art only through its taste if it’s interesting, emotional and brings me joy?
I put my silverware together on top of my empty plate, drank my last zip of coffee. I have the feeling that we’ll be back.
